Mongolian Beef and Brown Rice

After I got back from an absolutely amazing weekend in Vegas, I had an awfully strong craving for beef…weird.  Maybe something to do with lack of iron, who knows.  Or…it might have been the lack of food the entire weekend!  Any who, I was craving some real food, and this certainly satisfied that craving.  The best part about it? It’s SO quick and simple!

This recipe would also be great with chicken or tofu depending on your preference.

1 lb. Beef Sirloin cut into thin strips
¼ Cup Soy Sauce
1 Tbsp Hoisin Sauce
1 Tbsp Sesame Oil
2 Tsp Granulated Sugar
1 Tsp Chopped Garlic
1 Tbsp Chili Flakes
1 Tbsp Sesame Oil

Mix all ingredients together and add beef, let it marinade for 1-4 hours in the fridge.  Because I was so hungry and couldn’t wait to eat, I actually only marinated it long enough for me to make the brown rice and clean up the kitchen.  The flavor was amazing, but the longer you marinate it, the more tender and flavorful it will be.

In a wok or sauté pan, heat 2 tablespoons of vegetable oil over medium high heat, add beef, stirring constantly to prevent it from burning. Thin strips cook extremely quickly.  Serve with brown (or white) rice and enjoy!
