5 Minute Asian Style Orange Beef and Veggies

These days I find myself struggling to balance limited between work, gym, hobbies, home life, family and friends, but one sacrifice I refuse to make is to settle on what I eat.  I'm constantly trying to whip up healthy, quick and let's not forget, budget friendly meals amidst my hectic lifestyle.

For this recipe, I tried to keep it as simple as possible, just a few great ingredients packed with lots of flavor.  As I've mentioned in recent posts, I'm absolutely in love with coconut oil.  It just adds so much flavor and it's such a stable oil, a little goes a long ways.  You'll be surprised at how amazing broccoli is with coconut oil, I actually crave it now!

1 lbs top sirloin
1/4 cup soy sauce
1 orange
1 tsp brown sugar
1 garlic clove
1/2 inch ginger
1/2 tsp sesame seeds
1/2 tsp chili flakes
1 tbsp coconut oil
1 lg head of broccoli
1 red bell pepper

Start by making the marinade for the beef by combining soy sauce, zest and juice squeezed from the entire orange, brown sugar, and chili flakes.  Next for the garlic and ginger, I like to use my microplane zester and grate the ginger and garlic into the bowl, it's a time saving trip that saves me the tedious work of having to finely chop the ginger and garlic.  Mix the marinade well, cut sirloin into 1/2 inch chunks and add to the marinade mixture.  There's no set time limit, just let it do it's thing while you are preparing the rest of the meal.

To prepare the veggies chop broccoli into 1/2 inch florets and thinly slice bell pepper.  Heat 1 tbsp of coconut oil over medium heat and sauté broccoli.  I personally like them slightly al-dete with a bit of a bite to them, so cook until your preferred level of doneness.  Since the broccoli takes longer, add the bell peppers towards the end and cook through, sprinkle with sea salt and pepper to bring out the flavor - don't skip this, you'll be amazed at the difference a little salt makes here.

For a little added flavor and the the glaze portion of the orange glazed beef, when you remove the beef from the pan, keep the sauce and reduce heat to medium and cook down until sauce has reduced and thickened.  Pour it over your beef for an extra flavorful punch.

Remove veggies from the pan and set aside, next add beef, sauté until cooked.  Serve aside veggies and brown rice and enjoy!  It's really that simple and healthy!
